Baked Potato Soup & Granola Bars

When we got home from the hospital with Rhys, Jenn had these wonderful eats waiting for us at the house! This Baked Potato Soup is actually a Cooking Light recipe, and the granola (snagged from her blog :)) is made with healthy ingredients, too! Anyways, we loved these treats, and I've actually made this granola twice in the last few days! So, try them and enjoy!! "Thank you, Jenn!!"

Baked Potato Soup

Ingredients:
4 baking potatoes
2/3 c all purpose flour
6 c milk
1 c shredded cheese
1 tsp salt
½ tsp black pepper
1 c low fat sour cream
¾ c chopped green onions
6 bacon slices, cooked

Directions:
Cook potatoes and peel.
Lightly spoon flour into a dry measuring cup. Place flour in large dutch oven; gradually add milk, stirring with a whisk until blended. Cook over med heat until thick and bubbly. Add mashed potatoes, cheese, salt & pepper. Remove from heat. Stir in sour cream and onions. Cook over low heat about 10 minutes (do not boil)

Granola Bars/Squares

Ingredients:
2 1/2 cups crisp rice cereal
2 cups uncooked quick-cooking oats
1/2 cup raisins
1/4 c dried cranberries
1 small package of sunflower seeds
1/2 cup firmly packed brown sugar
1/2 cup light corn syrup
1/2 cup peanut butter
1 teaspoon vanilla extract
1/2 cup milk chocolate morsels

Directions:
Combine first 5 ingredients in a large bowl; set aside.
Bring brown sugar and syrup to a boil in a small saucepan over medium-high heat, stirring constantly; remove from heat. Stir in peanut butter and vanilla until blended.
Pour peanut butter mixture over cereal mixture, stirring until coated; let stand 10 minutes. Stir in chocolate morsels. Press mixture into a 13- x 9-inch pan; cool in pan on a wire rack. Cut into bars.
