Oatmeal Whole Wheat Quick Bread

Fresh, healthy bread, anyone?
This bread recipe is much like the whole wheat baguette at Panera Bread...super healthy with high fiber! It's best right out of the oven...hot crispy crust all around, soft and warm on the inside. Mmmmmmmmmmm....
I made the mistake of thinking this was going to be sweet and dessert-like, but remember that it's 'quick bread,' more like a sandwich or dinner bread. Russell and I sweetened it up with a lot of butter and honey! :)


Original recipe yield: 1 loaf

INGREDIENTS
2 cups rolled oats
2 cups whole wheat flour
1 tablespoon and 1 teaspoon baking powder
1 teaspoon salt

1/4 cup milled flax seed, optional
3 tablespoons honey
2 tablespoons vegetable oil
2 cups milk
2 tablespoons vanilla flavoring


DIRECTIONS
Preheat oven to 350 degrees F.
Grind oatmeal in a food processor or blender. In a large bowl, combine oatmeal, flour, baking powder, salt and milled flax seeds. In a separate bowl, dissolve honey in vegetable oil then stir in the milk and vanilla. Combine both mixtures and stir until a soft dough is formed. Dump the dough into a lightly oiled loaf pan.
Bake in preheated oven for about 35-40 minutes, or until bottom of loaf sounds hollow when tapped.
